My family has been outfitting restaurant kitchens since 1929, so we've been selling Carbon Steel cookware to chefs and restauranteurs for decades. A long-held restaurant secret, this European alternative to traditional cast iron is lighter, easier to season, and more responsive on the stovetop.
An alloy of iron and carbon, the cooking surface will develop a naturally nonstick patina over time that will only get better with age. No coatings to wear off over time, no gimmicky features, just a beautifully balanced pan that will last forever. I reach for this material most when I am searing proteins at high heat (it has a heat tolerance of 1200F), or know that my cooking could be too messy for Stainless Clad and I want to avoid the cleanup afterward (it's super easy to clean, just like cast iron). It's also perfect for the grill or even baking a cornbread.
